The bubbly begins flowing at 5:00 PM and that’s when we’ll be breaking out our favorite caviars – the exquisite
American Paddlefish and the subtle, buttery American Hackleback.

Here are some details about our special guest stars:

Pommery Brut Royal is a blend of 40 carefully selected crus from the Champagne region. It is made up of three
grape varieties: Pinot Noir, Pinot Meunier, and about one-third Chardonnay. Fresh and vivacious, with a supple,
fruity finish. A composition that is light yet well-structured and full of charm.
American Paddlefish, often called “Spoonbills,” are a cousin to sturgeons and yield roe ranging in color from pale
through dark steel-grey and golden “osetra brown.” The caviar is smooth and silky with a rich flavor.
American Hackleback is native to the great river systems of the American Midwest and is much faster growing and
smaller than most sturgeon, reaching only about 38 inches at maturity. The roe is dark, of medium bead, and has a
sweet, buttery, nut-like flavor.
